Pancake time!

pancakesPancake Tuesday in nearly upon – it’s on February 24 to be exact. And while this marks the near beginning of Lent, when you’re supposed to give something up, it’s also a great excuse to indulge until you’re fit to burst. The recipe below serves eight, and while we wouldn’t recommend you eat enough pancakes to feed that many people, it’s up to yourself….! You will need:

– 1 1/2 cups white flour
– 3 1/2 teaspoons baking powder
– 1 teaspoon salt
– 1 tablespoon white sugar
– 1 1/4 cups milk
– 1 egg
– 3 tablespoons melted butter

In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the centre and then pour in the milk, egg and melted butter, mixing until smooth.
Heat a lightly oiled frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot with whatever you like – lemon, sugar, cream…the list is endless and the result is always heavenly and will bring you right back to your childhood.
